Job Description

Our client, a leading Wine & Spirits Company, located in the Greater Toronto Area is looking to hire a Head Brewer.

Reporting into the VP, General Manager – Brewery, the Head Brewer will be responsible for the daily operations of the brewery operations department; specifically focusing on delivering product quality and employee culture and motivation. This will include overseeing 2 Plants, and managing a team of 11 that include brewers, assistant brewers, a packaging supervisor and packaging operators. The Head Brewer will also be responsible for purchasing raw materials, developing production plans, quality control and compliance, enforcing health and safety practices and staff training and development.

Responsibilities:

1) PRODUCTION:

  • Forecast production requirements and plan all production activities daily, weekly and monthly to meet demand.
  • Establish brewery production procedures.
  • Plan and execute all brewery projects.
  • Establish and maintain brewery sanitation and cleanliness standards and procedures.

2) QUALITY CONTROL:

  • Ensure product quality control daily.
  • Manage quality issues and inconsistencies.
  • Review quality parameters on an ongoing basis and adjust accordingly.

3) HEALTH & SAFETY:

  • Ensure health & safety is adhered to in the work practices of all employees.
  • Lead by example, promote safety in the workplace and train employees on safety measures.
  • Ensure personal protective equipment is utilized when required.
  • Maintain safe housekeeping.
  • Report all injuries to HR immediately.

4) MAINTENANCE:

  • Ensure daily, weekly and monthly maintenance of the brewery premises.
  • Ensure maintenance and cleanliness of all equipment and machinery.
  • Keep records of all maintenance activities.
  • Coordinate with external equipment maintenance services as required.
  • Troubleshoot equipment and machinery problems.

5) RECIPE DESIGN:

  • Remain innovative and competitive through new recipe design.
  • Adapt recipes as required due to changes in supply and quality of raw materials.

6) RAW MATERIALS:

  • Ensure consistent supply of raw materials and their quality.
  • Determine supply requirements for production and ensure cost efficiency.
  • Source suppliers for grains, hops, yeast, etc.
  • Liaise with the Purchasing Department for the acquisition of required raw materials.
  • Maintain accurate inventory counts of raw materials

7) INVENTORY:

  • Conduct and review inventory counts on a monthly basis.
  • Investigate all discrepancies and implement solutions.

8) COST CONTROL:

  • Control all expenditures within the brewery.
  • Negotiate all supplier contracts with the best interest of the organization in mind.
  • Perform cost/impact analysis where required to determine necessity of expenditures.
  • Keep concise records of all expenditures in conjunction with the Accounting department.

9) DISTRIBUTION:

  • Assess and plan distribution and expansions with Brewer's Retail and LCBO in conjunction with manager.
  • Interact daily with Brewer's Retail management and Beer Stores in order to; maintain balanced supply, manage old-code/damaged returns, review company sales and trends and provide primary contact for Brewer's Retail activities and initiatives.

10) LICENSING:

  • Ensure timely renewals of required licenses (ie. Manufacturer's license).

11) RECORD KEEPING:

  • Maintain Excise Duty and in-house production records on a daily basis.
  • Ensure compliance with the Excise Duty Act.
  • Ensure compliance with government regulations as they relate to record keeping

Experience and Qualifications:

  • Bachelor's Degree in Science, preferably Biology and/or Chemistry.
  • Beer Judge Certification or Sensory evaluation training.
  • 8-10 years of direct brewery experience.
  • 3-5 years management experience within the brewery industry.
  • Proven excellence in supervision, people development, leadership and communication.
  • Solid brew house operation experience and understanding of brewing principles.
  • Equipment maintenance abilities, and Microbiological laboratory skills.
  • Demonstrated production planning abilities while having a keen eye for cost analysis.
  • Sound knowledge of the beer industry (products, trends and competitors).
  • Demonstrated innovative recipe design abilities.
  • Sanitary process and Filtration skills.
